Hutto, TX – Top Notch Hamburgers
Construction is underway on a second location for Austin staple Top Notch Hamburgers. Located in the Co-Op District, Hutto’s 35-acre mixed-use development, the restaurant is expected to open late this summer, according to a press release.

Emeryville, CA – Calypso Rose Kitchen
Chef Verna McGowan is branching out from her role as Pulitzer Prize-winning author Alice Walker’s personal chef, and she’s opening her own Caribbean restaurant in Emeryville, Calypso Rose Kitchen.

Ashburn, VA – Bebop
A new Korean-Mexican fast-casual restaurant called Bebop is getting close to opening in Ashburn. The sign has recently been installed over the door and the Bebop team is putting the finishing touches on the space. As The Burn first reported last October, Bebop Korean-Mexican Grill is coming to a spot in the Old Ashburn Square shopping plaza. That’s a small strip center along Ashburn Road in Old Ashburn.

Wilmington, NC – Covey
Covey Property LLC is seeking a conditional rezoning to allow for its new eatery at the southeast corner of Independence Boulevard and Tiburon Drive. The neighborhood restaurant would seat 100 diners in the main room and lounge, plus 44 on the patio, at least 30 at the wine bar and more in a private dining space. “‘Covey’ means ‘a group or gathering,’” according to the project narrative, submitted by the applicant Brandon Wilson. “That name was chosen because this restaurant is intended to be a neighborhood restaurant.”

Seattle, WA – MariPili Tapas Bar
The biggest opening in Seattle to look out for is MariPili Tapas Bar, coming to Capitol Hill early this summer. While many are sad to lose Cafe Presse (MariPili is taking over the old space), the new Spanish restaurant looks to slide right into the neighborhood serving dishes like grilled octopus with broccoli and savory Galician flan, among bigger plates like bacalao with manchego gnocchi. The chef draws on her family ties to the Galicia region in Spain—with both the menu and the fishing nets that will hang from the ceiling.

Danbury, CT – Po-Yo
Empire of the Incas, one of Danbury’s most popular and colorful eateries, sits at 241 Main Street, thanks to owner David Aliaga. Mr. Aliaga is the proud owner of the most popular Peruvian restaurant in the city. He decided to alleviate the problem by giving the Pollo a la Brasa a place of its own across the street at 274 Main St. and named it Po-Yo. Opening day is scheduled for Monday, April 25.
